Friday Foodies – Vegan Banana Cake!

This recipe is from the lovely Christine, who like me has recently make the vegan switch. We all enjoyed this lovely cake the other weekend, decorated with a marzipan topping. Divine!

My favourite banana cake recipe:
250 g wholemeal flour
150 g oatflakes
100 g unrefined cane sugar
3 teaspoons baking powder
A little bit of Salt
200 ml coconut oil (raw organic for best taste)
1 apple
3 bananas
150 g blueberries
Blueberry jam
Marzipan (I use vegan ready to roll from Sainsbury)

All ingredients I use are organic, as it tastes better. And the best: it’s Vegan and cruelty-free!

First I put the oatflakes into the food processor and cut them so that they have the consistency of flour, but that is up to you really. If you like whole oatflakes in your cake then using them so is fine. Put that into a bowl. Add the flour the sugar, the baking powder and the salt and mix it up.

Coconut has a solid consistency when it’s cold, so you have to heat it up a little bit to make it liquid. Mix it with the already mixed up ingredients until all has been soaked with the oil. You could also put in the oil at last but having tried that already the cake seems to be more oily and that’s not happening when you put in the oil before adding the fruits.
Oh, and you could also use sunflower oil instead, as it’s much cheaper, but the taste will be very different.

At this stage I pre-heat the oven (200 celcius).

Then I put the apple into the food processor and cut it really small and then I add the bananas and that should make a nice smooth fruit mash. Together they should be around 400 g. Add these to the other ingredients into the bowl.

The cake form needs to be “oiled and floured” in order to prevent the cake to stick to it when taking it out. I use coconut oil and the wholemeal flour for this as well, again for best taste results.

Put the mix into the cake form. After that I put the blueberries in and push them under so that they are not visible. This will let the blueberries stay in the cake rather then having them at the top or bottom of it.

Baking time is 40 minutes only (if you make muffins, which I tried too and it works well, then max. 30 minutes at 175 celcius). Actually 175 works as well for the cake, but you’ll have to leave it in a bit longer (have tried that as well and yes, I have done this cake a lot of times by now). The baking time also depends on the form you are using. I use one with a whole in the middle which reduces the time as the heat comes also from the middle of the cake.

Prepare this cake a day before you want to eat it for best taste results. If you will eat it the same day it will feel very dry.

I let the cake cool down completely.

The next day I put blueberry jam on top and at the sides to make the roll out marzipan stick to the cake. Roll out the marzipan, put it on the cake and push it down a little so that it sticks to the cake.

Add some icing sugar if you want for decoration (or whatever comes into your mind).

Encounters with unkindness

Can you remember the last time you were unkind to someone? Or thoughtless about something? Chances are, it doesn’t make you feel all that good – it probably makes you feel smaller, inside. When I remember acts of unkindness, either done by myself or done to myself, I feel a squirming inside, an uneasiness.

Still working on thoughts with compassion, exploring  words and acts of unkindness has been an enlightening experience.  Looking deeply at how it made me feel, what my reactions were, what others’ reactions were, what the outcome was, how it could have been prevented – all these I have meditated upon these last few months.  What I’ve come to realise is that no one likes to be unkind. There is no joy from it; perhaps if you are mentally ill, or there is a function in the brain that is not working as it should, then maybe you don’t feel bad, but on the whole, unkind acts do not produce any joy, any feelings of wellness.

Through our connectivity to each other, we perhaps have a deep-rooted empathy that we can acknowledge, if only we allow our ego to fall away, to quiet down and listen to what others have to say above the racket in our own brain.  We all share a life force; we all share a space on this planet, in this universe.  We are all thinking and feeling animals – if you are an animist, you also acknowledge a consciousness and inherent value in all things.  As humans, we all breathe the same air, air expelled from the lungs of others, turned into oxygen through various other life forms, breathing and sharing, breathing and sharing, the life breath that our ancestors breathed thousands of years ago, the life breath our lover breathes right now.

The word “kind” can mean a generous, benevolent, good person or deed, act or consideration.  It can also mean to be of a like group of individuals or objects – being of the “same kind”.  What I would posit is that the two meanings are entwined – kind thoughts, acts and deeds are a direct result of and inspired by being of the same kind.

Being unkind is distancing your self from others, making a distinct split in compassion from others, sometimes even diving into self-centredness in an anthropocentric world view.  Yet this distance, this separation is false – we can never be other than another life form on this planet. Another life form – we are surrounded by others all the time. Some are seen, some unseen – some are natural forces that create and destroy with violence or beauty, others are microscopic and surreal in their manifestation.  Yet we are never alone.

I think that the natural human tendency is to be kind towards others, for we have a specific consciousness that allows us to see and feel the repercussions of our actions.  We have the capacity of forethought, yet we use it all too seldom.  We are homo sapiens, the beings that are aware that we are aware. If we truly are aware, then unkind thoughts and deeds would not ring true in our heart of hearts.  Awareness is a journey towards the cessation of suffering.  If we are truly aware, then our suffering is eased.

Awareness comes in many forms, from simply being in the present moment to an understanding of the grander scheme of things, or seeing things from outside of your own personal perspective.  For how often has our perspective been wrong?  When we have been unkind to others, chances are it is because our perspective was skewed, and we reacted badly to a situation.  If we remember compassion, and strive to see the bigger picture, then with a little discipline and a lot of love we can change or modify our behaviour to help ease the suffering of all beings.

Those people who are unkind are trapped, and it may be helpful to remember that.  When someone is unkind to us, we can act with compassion. Sometimes that may mean seeing things from their point of view. Sometimes it may be walking away from a situation with honour and integrity.  When we find ourselves being unkind, or remember past deeds that are less than glowing, we can remind ourselves that it is up to us to choose freedom over chains.  We don’t have to let our behaviour rule us.  We can be passionate and loving without allowing emotion to skew our perspective. Emotion is such a personal thing, that it’s no wonder our wires get crossed all the time. It’s all about perspective.

In all things, I try to remember two words: be kind.  x

New book coming out May 2014!

This series is a set of introductory books, usually 25,000 words or less, on a topic that allows the reader to gain an foothold on a subject, and then inspire them to continue to find out more on their own personal journeys. This is the second book I have written for the series, the first being Zen Druidry (see my Books Page for how to buy).

Druid Magic

magic circleDruids aren’t associated with magic in the same way that other Pagan traditions, such as Wicca or Witchcraft seem to be.  Yet I’ve found that in every spiritual path, there are elements of magic contained within that are often very similar in nature.

What is Druid magic? Do Druids cast spells? Have magical tools? Do we think of Gandalf, brandishing his staff and saying mightily “You Shall Not Pass!” or his mushroom-addled fellow, Radagast, who lives in the woods, talks to animals and, according to the latest Hobbit films, has a rabbit-powered all-terrain sleigh and brings hedgehogs back from the dead?

Of course it’s none of these things. It would be pretty cool if it were. But Druid magic, like all magic, is subtler than what we see on the screen or read in books.  There isn’t lightning shooting from fingertips or fire balls sparking from one’s eyes.  In fact, many modern Druids don’t use magic at all, or don’t call it magic.

So what is magic? It has often been quoted these days as manipulating the natural forces of energy within nature to provide a desired result.  This could have many interpretations.  Flicking a switch and having my living room lit up at night could fall within this category, but I’m being a bit facetious. It is also often said that magic should be the last recourse after having tried all mundane means of solving a problem.  So how do Druids use magic, if at all?

There is a growing trend of blending Wicca and Druidry, as in Philip Carr-Gomm’s new book, Druidcraft.  This is a lovely way of expressing the divide between two very similar paths; kind of bridging the gap that lies between.  I thought the book, especially the audio book, was brilliant, and yet I’m still not one to perform spells on a regular basis.  Why is that?

As stated previously, magic is often the last recourse to a situation.  If all other means have been tried, and I’m plum run out of ideas, then I might turn to magic. I might equally turn to prayer. Praying for some guidance, asking the gods, the spirits, the ancestors for a little advice when I’m stuck could be called a spell – it could also be called a prayer.  Lighting a candle and some incense, meditating and then seeking some clarification or inspiration from the ancestors could indeed look like the workings of a magical spell. I think perhaps the difference is in the intention – in both magic and prayer, we are hoping for a result, but the results are often different.

In prayer, asking for the gods to solve a problem for us rarely, if ever, works in my own experience.  I prefer to ask them for inspiration on how to get through this, or my spirit guides on where to go to next in order to resolve and issue.  Casting a spell bypasses the question, in a way, and seeks to get an answer to a question not asked.  Perhaps this is why I resort to magic so little, I always like to ask the input of others to seek out different perspectives on a situation. Again, this is only my own personal views, and others may have other ways of both prayer and spell-casting that are vastly different to my own.

For me, as a Druid I am always questing the awen – for me, awen is the Grail.  Inspiration, flowing spirit – it is such a beautiful word from the Welsh language that has so many different meanings.  To me, awen is magic, though perhaps not in the spellcaster’s sense of the word.  It is energy, it is flowing, it is the Tao and The Force of the Jedi Knight.  It is something to be tapped into in order to gain a new perspective, to see the bigger picture, to obtain compassion. Awen is Buddhist enlightenment.  It is the Christian “God is Love”.

Instead of performing a magic spell, I might wander the heathland or forest, looking for inspiration around me. I might find a place to pray, using that inspiration to guide my prayers to better understanding of myself, the situation, the world.  When all other recourses have failed, then I might try magic – the last recourse.

I feel that magic is something special, something not to be abused or overused.  We often hear the term “god-bothering” and magic may indeed be another form of “bothering” – whether it is the elements, the energy of nature, or something else entirely. I feel that Druids on the whole would turn to awen rather than magic, but perhaps with the blending of Druidry and other traditions this could indeed change, or maybe even change back to the way Druidry used to be – who knows?

Perhaps my quest for awen is my magic.  Magic includes transformation, and questing the awen will indeed change someone.  None of the knights on the Grail quest were ever the same.  None who seek enlightenment will ever be the same person they were before. We are constantly changing anyways, living a life of impermanence and fluidity, of change and flux.

Perhaps just tapping into that idea is magic, is awen.

Friday Foodies- Boulawnee

This is a recipe from a friend of mine, Steve – thanks Steve!

For a really nice Afghan dish (again, really simple) of fried leek pastries (called boolawnee), first make a filling of finely chopped leek, a pinch of cayenne pepper, some salt, and a splash of olive oil – squeeze it all up with your hands to soften it. Then make a simple dough with plain or bread flour and a pinch of salt; need till it’s elastic and springy. Roll into a cylinder and cut into disks. Roll the disks into small circles (around 8 inches across). Place a dollop of your filling into the centre of each dough circle and pinch up into little pasties (I use this method: https://www.youtube.com/watch?v=k9NkKQY-Qvg). Deep fry until they are golden brown and serve with salad and a sweet chilli or soy yoghurt dip). They’re supposed to be appetizers, but they’re so tasty we usually eat them as the centrepiece to a large salad spread.

For an amazing salad to go with the above – grate cooked beetroot, carrot, and a little apple (3:3:1 ratio), add a few drops of orange blossom water and a splash of lime juice, boom!

Heaven and Hell

Blending Buddhist and Zen principles into my Druidry is integral to helping me find my personal spiritual path.  There is no monopoly on wisdom, and I find the teachings of both Buddhism and Druidry are universal.

One aspect of Buddhism that I find is often misquoted or misinterpreted is the idea that you push away your feelings, in order to function with a clear mind. What I have found is that within Buddhist training and discipline, you not only feel your feelings more, you also learn more from the feeling itself.

We are not taught to suppress our feelings within Buddhist teachings. Letting go of attachments is what is at the heart of Buddhism. That includes attachments to your feelings.  So, we feel our anger, our pain, our grief acutely – we give ourselves some time and space to truly feel these feelings, to express them if we need to with honour and compassion, and then to let go. It’s not easy to do at first, but not many things in life are…

I can be very quick to anger. But I have learned to try to not to act or react on that anger without truly feeling it first. In some situations, yes, you may have to make a immediate decisions. If you see an animal being abused, you act right away to stop it. However, you can feel your anger but not allow it to control you, thereby allowing you to act appropriately.  Anger can often to lead violence, physical or verbal, which only elevates the suffering in both parties and which resolves nothing. We should act to help each other and all other living beings on the planet.

When I get angry, if I feel I cannot react to a situation respectfully or honourably and I have the opportunity to take a moment, I do.  Taking a walk, or sitting and meditating with the anger is a great tool to use in order to gain a deeper understanding of it.  Learning how your mind works is an invaluable asset to living a life with greater understanding, or compassion.  If I can, I sit with my anger, or grief, pain, suffering and really feel it. I look it over from all sides.  I try to find root causes of it.  I see that anger reflected in others around me. I then place myself in the situation of the person that I am angry with.  Why am I angry with them? What has caused the anger within me?

Buddhism teaches that anger comes from within – it is not something that is bestowed from without. This is seen in the famous Zen story of the monk and the warrior:

The old monk sat by the side of the road. With his eyes closed, his legs crossed and his hands folded in his lap, he sat. In deep meditation, he sat.

Suddenly his zazen was interrupted by the harsh and demanding voice of a samurai warrior. “Old man! Teach me about heaven and hell!”

At first, as though he had not heard, there was no perceptible response from the monk. But gradually he began to open his eyes, the faintest hint of a smile playing around the corners of his mouth as the samurai stood there, waiting impatiently, growing more and more agitated with each passing second.

“You wish to know the secrets of heaven and hell?” replied the monk at last. “You who are so unkempt. You whose hands and feet are covered with dirt. You whose hair is uncombed, whose breath is foul, whose sword is all rusty and neglected. You who are ugly and whose mother dresses you funny. You would ask me of heaven and hell?”

The samurai uttered a vile curse. He drew his sword and raised it high above his head. His face turned to crimson and the veins on his neck stood out in bold relief as he prepared to sever the monk’s head from its shoulders.

“That is hell,” said the old monk gently, just as the sword began its descent. In that fraction of a second, the samurai was overcome with amazement, awe, compassion and love for this gentle being who had dared to risk his very life to give him such a teaching. He stopped his sword in mid-flight and his eyes filled with grateful tears.

“And that,” said the monk, “is heaven.”

When our emotions control us, when they are the ones that are raising the sword and not our true minds, that is when we are in hell. When we are aware of what we are doing, and in that awareness come to understand the nature of all beings, ourselves included, then we are in heaven.  Acting with intention, instead of reactionary living, is what can make this world a better place.

 My anger can fuel my fire to fight against injustices in the world. It is kept in check, it is a sheathed sword.  I know it is there, but I choose not to use it, instead working with compassion.  It is a conscious choice. Sometimes I fail, and when I do I notice where and how I have failed, and see the opportunity to work with that. I cannot blame others for my anger.  Their behaviour is nothing that I can control. What I can work on is my own behaviour towards them and to making the world a better place.  Giving like for like can be a very damaging thing to do.  When someone hurts us, our first reaction, our first desire is often to hurt them back.  It takes a lot of work to come out of this mindset, a lot of practice.

They say that practice makes perfect. So every time I let my anger rule me, as Thich Naht Hanh said, I am practicing being angry. Every time I practice awareness, mindfulness and compassion, I get better at those ways of being and living.  I know which I would rather aim towards!

So, I’m going to try out something a little different on this blog, and every Friday try to post a great new food recipe. I’m trying out loads of new quick and easy vegan food recipes, and will post the best ones up here on a Friday Foodie section! Something a little light-hearted – and please share your recipes too! (Vegan or vegetarian).

Recipe for Jo’s Spicy Vegan Bean Burgers:

Fry off an onion, half a grated carrot and half a red pepper in some oil
Chop into chunks and boil a sweet potato and the other half of the carrot
Heat up a can of kidney beans so that you can mash them
Mash the boiled sweet potato and carrot with the beans
Add the fried onion and carrot
Add as much fresh chopped or dried chili as you like
Add salt and pepper to taste
Add 100g of bread crumbs and about 3/4 cup of flour
Work with hands and make into patties, then pop in fridge for about half hour
Fry up (about 5 mins either side) and serve with salsa, or Jo’s easy quacamole (mash an avocado with some egg-free mayonaise)

Makes about 4 enormous burgers, or six normal size…
